  • 4 pieces Boneless and skinless chicken breasts Use fresh or thawed
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 4 cups Mixed vegetables (fresh or frozen) Any combination of veggies like bell peppers or zucchini

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken breasts with olive oil, garlic powder, paprika, and salt.
  3. Add the mixed vegetables to the bowl and toss again to ensure all the flavors are well mixed.
  4. Transfer everything to a baking sheet in a single layer for even cooking.
Cooking
  1. Bake for 25-30 minutes, or until the chicken is cooked through and the veggies are tender and beginning to turn golden.
  2. Let the dish rest for a few minutes before serving.
