- Stir in mixed vegetables, diced tomatoes (with the juice), beef broth, garlic powder, paprika, and season with salt and pepper.
- Add the cooked rice to the skillet and mix everything until well combined.
- Pour the mixture into a greased baking dish, spreading it evenly.
- Sprinkle shredded cheddar cheese on top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Let cool slightly before serving.
