  • 2 cups cooked rice Use leftover rice or cook fresh.
  • 4 pieces boneless, skinless chicken breasts Can substitute with bone-in or thighs.
  • 1 can cream of chicken soup Can use low-fat version for a healthier option.
  • 1 cup sour cream Greek yogurt can be used as a substitute.
  • 1/2 cup chicken broth Use low-sodium broth if desired.
  • 1 packet onion soup mix
  • 1 cup shredded cheddar cheese Feel free to use different kinds of cheese.
  • to taste Salt and pepper
  • Chopped parsley for garnish Add fresh for a pop of color.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, blend together the cream of chicken soup, sour cream, chicken broth, and onion soup mix until well combined.
  3. In a greased casserole dish, layer the cooked rice and chicken breasts evenly.
  4. Pour the soup mixture over the top, making sure all pieces are coated.
  5. Sprinkle shredded cheddar cheese on top.
  6. Cover the dish with foil and bake for about 40 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the casserole is bubbling and golden.
  8. Once done, add salt and pepper to taste and garnish with chopped parsley before serving.
