  • 2 large eggs

Method
 

Preparation
  1. Peel and grate the potatoes and onion finely.
  2. Squeeze out excess moisture using a clean cloth.
  3. In a bowl, mix the grated potatoes and onion with eggs, flour, salt, and pepper until well blended.
Cooking
  1. Heat oil in a skillet over medium heat until hot.
  2. Drop spoonfuls of the potato mixture into the skillet and flatten them slightly.
  3. Fry for about 3-5 minutes on each side until golden brown and crispy.
  4. Remove and drain on paper towels to absorb excess oil.
  5. Serve hot with sour cream or applesauce if desired.
