Ingredients

  • 2 cups cooked chicken, shredded Shredded rotisserie chicken works well.
  • 2 ripe avocados, diced Add gently at the last moment.
  • 1 cup cherry tomatoes, halved Can substitute with diced mango for sweetness.
  • 1/2 cup red onion, diced
  • 1/2 cup celery, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 Juice of lime Squeezed over the salad.
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken and diced avocados.
  2. Add in the halved cherry tomatoes, diced red onion, chopped celery, and cilantro.
  3. Squeeze the juice of one lime over the mixture, seasoning with salt and pepper to taste.
  4. Gently toss everything together until it's well coated.
  5. Serve immediately, or refrigerate for up to 2 hours before serving.
