  • 2 pieces ripe avocados Choose ripe but not overripe avocados for optimal texture.
  • 4 cups mixed greens Spinach, arugula, or any greens you have will work.
  • 2 pieces oranges, segmented Tangerines or grapefruit can be used as substitutes.
  • 1/4 pieces red onion, thinly sliced
  • 1/4 cup feta cheese Optional, but adds a great salty contrast.
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, toss together the mixed greens, diced avocados, orange segments, and thinly sliced red onion.
  2. In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well blended.
  3. Drizzle your dressing over the salad, and gently toss everything together to ensure it's evenly coated.
  4. If using feta, sprinkle it on top just before serving for that extra layer of flavor.
  5. Serve the salad immediately for the best freshness and flavor.
