  • 4 fillets Cod (thick, white cod fillets) Feel free to substitute with halibut or haddock.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil For sautéing.
  • 1 medium Onion Sauté until translucent.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Ginger Grated.
  • 1 can Coconut Milk Full-fat preferred.
  • 3 tablespoons Lemon Juice Freshly squeezed.
  • 1 teaspoon Lemon Zest For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large skillet over medium heat. Toss in the onion and sauté until it turns translucent, about 3-4 minutes.
  3. Add in the garlic and ginger; cook for another minute, until you can smell their beautiful aroma.
  4. Pour in the coconut milk and lemon juice. Stir well, then season with salt and pepper.
  5. Place the cod fillets into the skillet, spooning some sauce on top to coat them lovingly.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Just before serving, sprinkle with fresh lemon zest for a touch of brightness.
