Baked Feta Spaghetti Squash

  • 1 piece spaghetti squash Medium-sized squash
  • 200 g feta cheese Crumbled or block form
  • 2 cups cherry tomatoes Halved if large
  • 2 tablespoons olive oil Extra virgin recommended
  • to taste Salt and pepper Adjust according to preference
  • as needed Fresh basil For garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the insides with olive oil and season with salt and pepper.
Baking
  1. Place the squash halves cut-side down on a baking sheet and bake for about 30-40 minutes, or until tender.
  2. While the squash is baking, toss cherry tomatoes and feta cheese in a bowl with olive oil, salt, and pepper.
  3. After 20 minutes of baking, add the tomato and feta mixture on top of the squash. Continue baking until the tomatoes burst and the feta melts, about 10-15 minutes more.
Serving
  1. Once done, scrape the spaghetti squash into strands with a fork and mix it with the sauce.
  2. Serve warm and garnish with fresh basil.
