  • 1/2 teaspoon baking soda

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup molasses
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt until fully combined.
  3. In a separate bowl, cream the softened butter with both sugars until the mixture is light and fluffy.
  4. Beat in the molasses and egg until the mixture is perfectly combined and smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix!
  6. Form small balls of dough and roll each one in granulated sugar for a delightful sweet coating.
  7. Place the sugar-coated balls onto baking sheets lined with parchment paper, ensuring you leave enough space between each one.
  8. Bake in the preheated oven for 8-10 minutes until the edges appear nicely set, and the tops are slightly cracked.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
