Cooking the Rice

Preparing the Chicken
- Cut the chicken breast into bite-sized pieces and season with salt and pepper.
Sautéing the Chicken
- Heat olive oil in a large skillet over medium-high heat and add the chicken. Sauté for about 6-8 minutes, until golden brown and cooked through.
Mixing the Sauce
- In a small bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice.
Adding Veggies
- Once the chicken is cooked, toss in the mixed veggies and cook for another 2-3 minutes until they’re just tender but still crisp.
Combining Everything
- Remove from heat, pour the sauce over the chicken and veggies, stirring until everything is perfectly coated. Serve over the prepared rice.
