  • 1 cup cooked rice Choose from white, brown, or cauliflower rice.
  • 1 cup mixed veggies Use a mix of broccoli, bell peppers, and carrots.
  • 2 tablespoons olive oil For sautéing the chicken.
  • to taste salt and pepper For seasoning the chicken.
For the Sauce
  • 1/2 cup mayonnaise Or substitute with a vegan alternative.
  • 2 tablespoons sriracha Adjust based on spice preference.
  • 1 tablespoon honey Or substitute with agave for vegan version.
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Method
 

Cooking the Rice
  1. Follow the package instructions to cook your rice to perfection.
Preparing the Chicken
  1. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
Sautéing the Chicken
  1. Heat olive oil in a large skillet over medium-high heat and add the chicken. Sauté for about 6-8 minutes, until golden brown and cooked through.
Mixing the Sauce
  1. In a small bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice.
Adding Veggies
  1. Once the chicken is cooked, toss in the mixed veggies and cook for another 2-3 minutes until they’re just tender but still crisp.
Combining Everything
  1. Remove from heat, pour the sauce over the chicken and veggies, stirring until everything is perfectly coated. Serve over the prepared rice.
