  • 1/2 cup barbecue sauce (choose your favorite brand—sweet, smoky, or spicy)
  • 2 cups shredded cheddar cheese (feel free to mix with Monterey Jack for an extra twist)
  • 4 large flour tortillas (the larger, the better!)
  • 1/4 cup chopped green onions (optional, but adds a nice freshness)
  • 2 tablespoons olive oil (for that crispiness we crave)

Preparation
  1. In a bowl, combine the shredded chicken and barbecue sauce, mixing until every bite is well-coated.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Lay one tortilla flat in the skillet, and sprinkle with 1/2 cup of shredded cheese.
  4. Spread 1/2 cup of the BBQ chicken mixture evenly over the cheese, then top with another 1/2 cup of shredded cheese.
  5. Cover with a second tortilla, and cook for about 3-4 minutes until the bottom is golden brown and the cheese begins to melt.
  6. Gently flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is fully melted.
  7. Remove from skillet, slice into wedges, and garnish with chopped green onions if desired.
  8. Serve warm and enjoy every bite!
