- In a bowl, combine the shredded chicken and barbecue sauce, mixing until every bite is well-coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Lay one tortilla flat in the skillet, and sprinkle with 1/2 cup of shredded cheese.
- Spread 1/2 cup of the BBQ chicken mixture evenly over the cheese, then top with another 1/2 cup of shredded cheese.
- Cover with a second tortilla, and cook for about 3-4 minutes until the bottom is golden brown and the cheese begins to melt.
- Gently flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is fully melted.
- Remove from skillet, slice into wedges, and garnish with chopped green onions if desired.
