Ingredients
  

For the crust
  • 1 cup All-Purpose Flour (or gluten-free flour) Use gluten-free flour for a gluten-free version.
  • 1/2 cup Unsalted Butter (cold and cubed) Ensure the butter is cold for a flakier texture.
  • 1/4 cup Granulated Sugar For the crust.
  • 1/4 teaspoon Salt
  • 1 large Egg Yolk
  • 2-4 tablespoons Ice Water Use cold water.
For the filling
  • 2 cups Fresh Blackberries (or raspberries/blueberries) Can use different berries as desired.
  • 1/2 cup Granulated Sugar Adjust sugar based on berry tartness.
  • 1 tablespoon Lemon Juice Fresh juice is best.
  • 2 tablespoons Cornstarch
For the topping
  • 1/2 cup Light Brown Sugar (or granulated sugar)
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted) Can substitute with almonds or walnuts.
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. In a bowl, mix together the flour, 1/4 cup of granulated sugar, and salt. Add the cold cubed butter and mix until it resembles coarse crumbs.
  3. Stir in the egg yolk and a few tablespoons of ice water until the dough comes together. Press the dough into the bottom of the prepared baking pan.
Berry Mixture
  1. In another bowl, combine the blackberries, 1/2 cup of granulated sugar, lemon juice, and cornstarch. Gently stir to coat the berries.
  2. Spread the berry mixture evenly over the crust in the baking pan.
Topping
  1. In a new bowl, mix together the brown sugar, baking powder, pistachios, flour, cold butter, egg, and vanilla extract. Stir until well combined.
  2. Pour this mixture over the blackberries and spread it evenly.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown. Allow to cool completely before cutting into bars.

Notes
