Preparation
- Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
- In a bowl, mix together the flour, 1/4 cup of granulated sugar, and salt. Add the cold cubed butter and mix until it resembles coarse crumbs.
- Stir in the egg yolk and a few tablespoons of ice water until the dough comes together. Press the dough into the bottom of the prepared baking pan.
Berry Mixture
- In another bowl, combine the blackberries, 1/2 cup of granulated sugar, lemon juice, and cornstarch. Gently stir to coat the berries.
- Spread the berry mixture evenly over the crust in the baking pan.
Topping
- In a new bowl, mix together the brown sugar, baking powder, pistachios, flour, cold butter, egg, and vanilla extract. Stir until well combined.
- Pour this mixture over the blackberries and spread it evenly.
Baking
- Bake for 30-35 minutes or until the top is golden brown. Allow to cool completely before cutting into bars.
