Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
Filling
  • 16 oz cream cheese, softened Make sure it's nicely softened for easier blending.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups fresh blueberries Gently fold in to avoid crushing.
  • 2 tablespoons lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C), and grease an 8x8-inch baking dish.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until you have a sandy texture that holds together when squeezed.
  3. Press this mixture firmly into the bottom of your prepared baking dish to form a solid crust.
  4. In another bowl, beat the softened cream cheese, 1 cup sugar, and vanilla extract together until smooth and creamy.
  5. Add the eggs one at a time, mixing until fully incorporated after each addition.
  6. Gently fold in the blueberries and lemon juice.
  7. Pour this mixture over your crust, spreading it evenly.
Baking
  1. Bake for 30-35 minutes, or until the edges are set and the center is still slightly jiggly.
  2. Let the bars cool down before placing them in the fridge to chill for at least 2 hours.

Notes
