Preparation
- Preheat your oven to 350°F (175°C), and grease an 8x8-inch baking dish.
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until you have a sandy texture that holds together when squeezed.
- Press this mixture firmly into the bottom of your prepared baking dish to form a solid crust.
- In another bowl, beat the softened cream cheese, 1 cup sugar, and vanilla extract together until smooth and creamy.
- Add the eggs one at a time, mixing until fully incorporated after each addition.
- Gently fold in the blueberries and lemon juice.
- Pour this mixture over your crust, spreading it evenly.
Baking
- Bake for 30-35 minutes, or until the edges are set and the center is still slightly jiggly.
- Let the bars cool down before placing them in the fridge to chill for at least 2 hours.
