Wet Ingredients
  • 1/2 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 2 large eggs Ensure eggs are at room temperature.
  • 1 tablespoon lemon zest
  • 1/2 cup milk
  • 1/2 cup lemon juice
  • 1/2 cup simple syrup (optional) For brushing on warm bread.
Fruits
  • 1 cup blueberries Use fresh blueberries when possible.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until combined.
  3. In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the lemon zest.
  5. Gradually add the dry mix to the wet ingredients, alternating with milk until just combined.
  6. Gently fold in the blueberries.
  7. Pour the batter into the prepared loaf pan and spread evenly.
Baking
  1. Bake for approximately 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. For extra flavor, brush the warm bread with a mixture of lemon juice and simple syrup.
  3. Let cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.
