Preparation
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs with olive oil, salt, pepper, garlic powder, and Italian seasoning.
- Place the chicken on a baking sheet and bake for about 25-30 minutes until cooked through and golden.
- While the chicken is baking, cook the spaghetti according to package instructions.
- In the last 2-3 minutes of cooking the pasta, toss in the broccoli.
- Once cooked, drain the pasta and broccoli and return them to the pot.
- Shred the baked chicken and fold it into the pasta.
- Stir in the light cheese until melted.
Serving
- Serve warm with a sprinkle of extra Italian seasoning and enjoy!
