Ingredients
  

For the pasta dish
  • 8 oz spaghetti
  • 2 pieces chicken thighs Skinless, boneless preferred.
  • 2 cups broccoli florets Fresh or frozen.
  • 1 cup light cheese (e.g., mozzarella or cheddar) Can substitute with creamier cheese.
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  3. Place the chicken on a baking sheet and bake for about 25-30 minutes until cooked through and golden.
  4. While the chicken is baking, cook the spaghetti according to package instructions.
  5. In the last 2-3 minutes of cooking the pasta, toss in the broccoli.
  6. Once cooked, drain the pasta and broccoli and return them to the pot.
  7. Shred the baked chicken and fold it into the pasta.
  8. Stir in the light cheese until melted.
Serving
  1. Serve warm with a sprinkle of extra Italian seasoning and enjoy!

Notes
