Ingredients
  

Bruschetta Topping
  • 2 cups cherry or Roma tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ¼ cup fresh basil, chopped
Main Ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 8 oz penne or spaghetti pasta
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional) Add for a spicy kick

Method
 

Preparation
  1. In a medium bowl, mix together diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, black pepper, Italian seasoning, and fresh basil. Allow this mixture to rest for about 10 minutes.
  2. Season your chicken breasts with salt, black pepper, garlic powder, and paprika.
Cooking
  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken and cook for about 4 to 5 minutes on each side until golden brown and cooked through.
  2. Remove the chicken from the skillet and let it rest for 5 minutes before slicing it into tender pieces.
  3. Cook the pasta in a large pot of salted boiling water until it’s just al dente. Drain it and drizzle with olive oil.
  4. In the skillet, toss in the cooked pasta, bruschetta topping, sliced chicken, and grated Parmesan cheese. Mix everything gently until well combined.

Notes
