Ingredients
  

Meat
  • 1 lb ground beef Can substitute with ground turkey or plant-based alternative.
Broth
  • 4 cups beef broth
  • 2 cups water
Pasta and Veggies
  • 2 cups pasta Your choice; small shapes work great.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
Seasonings
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
Optional Ingredients
  • 2 cups fresh spinach or kale Optional for extra nutrition.

Method
 

Preparation
  1. Brown the ground beef in a large pot over medium heat. Ensure it's fully cooked, then drain excess fat.
  2. Introduce the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Sauté until the vegetables soften, about 5 minutes.
  3. Pour in the beef broth and water, then stir in Italian seasoning, salt, and pepper to taste.
  4. Bring the mixture to a boil, and add your chosen pasta. Cook it according to the package instructions until al dente.
  5. If using spinach or kale, stir it in during the last few minutes of cooking until wilted.
  6. Adjust seasonings as needed, and serve hot!
