Ingredients
  

Pasta Ingredients
  • 8 oz pasta (penne or fettuccine) Any shape you prefer will work.
Main Ingredients
  • 2 pieces chicken breasts, sliced
  • 1 tablespoon Cajun seasoning More if you like a kick.
  • 2 tablespoons olive oil For sautéing.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced Any colors you prefer.
  • 1 piece onion, diced
  • to taste Salt and pepper
  • to serve Parmesan cheese For serving.
  • for garnish Fresh parsley For garnishing.

Method
 

Cooking the Pasta
  1. Cook your pasta according to package instructions. Drain and set aside; be careful not to overcook it!
Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced chicken breasts, and sprinkle with Cajun seasoning. Cook until they're nicely browned and fully cooked through. Remove the chicken and set aside.
Making the Sauce
  1. Using the same skillet, toss in the diced onions and sliced bell peppers. Sauté them until they're softened and starting to sweeten.
  2. Pour in the chicken broth and heavy cream, stirring well to combine. Bring this mixture to a gentle simmer.
Combining Ingredients
  1. Toss the cooked pasta and chicken back into the skillet, mixing everything together until it's all beautifully coated.
  2. Season with salt and pepper to taste.
  3. Serve hot, topped with generous shavings of Parmesan cheese and a sprinkle of fresh parsley.

Notes
