Method
Cooking the Pasta
- Cook your pasta according to package instructions. Drain and set aside; be careful not to overcook it!
Cooking the Chicken
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced chicken breasts, and sprinkle with Cajun seasoning. Cook until they're nicely browned and fully cooked through. Remove the chicken and set aside.
Making the Sauce
- Using the same skillet, toss in the diced onions and sliced bell peppers. Sauté them until they're softened and starting to sweeten.
- Pour in the chicken broth and heavy cream, stirring well to combine. Bring this mixture to a gentle simmer.
Combining Ingredients
- Toss the cooked pasta and chicken back into the skillet, mixing everything together until it's all beautifully coated.
- Season with salt and pepper to taste.
- Serve hot, topped with generous shavings of Parmesan cheese and a sprinkle of fresh parsley.

If you have leftovers, store them in an airtight container in the fridge for up to three days. Reheat in a skillet over low heat, adding a splash of chicken broth or cream if needed. For variations, consider adding shrimp or spinach!
