  • 8 oz penne pasta
  • 1 lb Cajun sausage (sliced) For a spicier kick, use spicy Cajun sausage.
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 medium bell pepper (chopped)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 1 cup shredded cheddar cheese Monterey Jack can be used for a different flavor.
  • 2 tsp Cajun seasoning
  • to taste Salt and pepper Adjust based on personal preference.
  • 2 tbsp olive oil
  • for garnish Fresh parsley Optional, but recommended.

Method
 

Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned.
  2. Toss in the chopped onion, bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes.
  3. Stir in the can of diced tomatoes and sprinkle with Cajun seasoning. Let it simmer for about 5 minutes.
  4. Add the penne pasta and enough water to cover. Bring it to a boil and cook until the pasta is tender, about 10-12 minutes.
  5. Lower the heat and stir in the heavy cream and shredded cheddar cheese, whisking until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes
