- In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned.
- Toss in the chopped onion, bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes.
- Stir in the can of diced tomatoes and sprinkle with Cajun seasoning. Let it simmer for about 5 minutes.
- Add the penne pasta and enough water to cover. Bring it to a boil and cook until the pasta is tender, about 10-12 minutes.
- Lower the heat and stir in the heavy cream and shredded cheddar cheese, whisking until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
