Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and white sugar until the mixture is smooth and fluffy.
- Beat in the eggs, one at a time, ensuring each is well mixed before adding the next. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually blend this dry mix into the creamed mixture.
- Fold in the oats, chopped apples, and half of the caramel sauce to create a delightful batter.
- Drop heaping tablespoons of the dough onto ungreased baking sheets, spaced apart.
Baking
- Bake for 10 to 12 minutes or until the edges are beautifully golden.
- Drizzle the remaining caramel sauce over the warm cookies and sprinkle with nuts, if desired.
- Allow to cool on the sheets for a few minutes before transferring to wire racks.
