  • 1 cup unsalted butter at room temperature
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour can be substituted with gluten-free flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups rolled oats
  • 1 cup chopped apples mix of sweet and tart recommended
Topping
  • 1 cup caramel sauce for drizzling
  • 1/2 cup chopped nuts optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until the mixture is smooth and fluffy.
  3. Beat in the eggs, one at a time, ensuring each is well mixed before adding the next. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually blend this dry mix into the creamed mixture.
  5. Fold in the oats, chopped apples, and half of the caramel sauce to create a delightful batter.
  6. Drop heaping tablespoons of the dough onto ungreased baking sheets, spaced apart.
Baking
  1. Bake for 10 to 12 minutes or until the edges are beautifully golden.
  2. Drizzle the remaining caramel sauce over the warm cookies and sprinkle with nuts, if desired.
  3. Allow to cool on the sheets for a few minutes before transferring to wire racks.

Notes

These cookies are best enjoyed warm with a scoop of vanilla ice cream or a dollop of whipped cream. To store leftovers, keep them in an airtight container at room temperature for about a week or freeze for up to three months.
