  • 8 oz spaghetti Can swap for whole wheat or gluten-free spaghetti.
  • ½ cup grated Parmesan cheese Plus extra for topping.
  • 1 cup shredded mozzarella cheese Can substitute with gouda for a smokier flavor.
Sauce Ingredients
  • 4 cloves fresh garlic, minced Use fresh garlic for best flavor.
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley chopped, for garnish Adds a lovely pop of color.

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente, typically around 8-10 minutes. Drain and reserve about ½ cup of pasta water.
Preparing the Garlic Sauce
  1. In a large skillet, combine unsalted butter and olive oil over medium heat. Once the butter is melted and bubbling, add minced garlic and sauté for 1-2 minutes until fragrant and golden.
  2. Lower the heat, and sprinkle in the Parmesan and mozzarella cheeses. Stir gently until the cheeses melt into a creamy sauce. Gradually incorporate reserved pasta water until you achieve desired consistency.
Combining Pasta and Sauce
  1. Add the cooked spaghetti into the skillet, tossing until each strand is coated in the cheesy garlic sauce. Season with salt and pepper to taste.
Serving the Dish
  1. Plate the spaghetti and finish with a sprinkle of fresh parsley and extra Parmesan cheese.
