Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- In a mixing bowl, whisk together the eggs, cottage cheese, and salt and pepper until well combined.
- Stir in the shredded cheese and chopped vegetables.
- Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
Baking
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin.

These egg bites can be served warm or packed for lunch. Store any leftovers in an airtight container in the refrigerator for up to 5 days, or freeze them for longer storage. To reheat, pop them in the microwave.
