Ingredients
  

Egg Mixture
  • 6 large large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (like bell peppers, spinach, or onions) Feel free to customize with your favorite vegetables.
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a mixing bowl, whisk together the eggs, cottage cheese, and salt and pepper until well combined.
  3. Stir in the shredded cheese and chopped vegetables.
  4. Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  2. Allow to cool slightly before removing from the muffin tin.
