- In a large skillet, heat the olive oil over medium-high heat.
- Add the steak pieces, seasoning them with salt and pepper. Cook until the meat is browned—about 3-4 minutes.
- Toss in the diced onion and minced garlic. Cook until the onion turns translucent, around 2-3 minutes.
- Stir in the rice until it’s nicely coated with the pan juices.
- Pour in the beef broth and bring it to a gentle boil.
- Reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove from heat and sprinkle the shredded cheese generously over the top. Cover again until the cheese is melted.
- Give everything a gentle stir and serve hot.
