- Heat a large skillet over medium heat.
- Add the ground beef and brown it until fully cooked, then drain any excess fat.
- Stir in the taco seasoning, diced tomatoes, and taco sauce. Cook for about 5 minutes.
Cooking
- While the beef is cooking, prepare the tortellini according to package instructions. Drain and set aside.
- Add the cooked tortellini to the beef mixture and fold everything together.
- If using corn, stir it in along with half of the shredded cheese. Cook until heated through and melt the remaining cheese on top.
Serving
- Garnish with chopped cilantro before serving hot.
