  • 1 pound ground beef Use lean ground beef for less grease.
  • 1 package tri-color tortellini Cook according to package instructions.
  • 1 tablespoon taco seasoning Adjust to taste.
  • 2 cups shredded cheese Cheddar or Mexican blend.
  • 1 can diced tomatoes Use diced tomatoes with green chilies for extra flavor.
  • 1 cup taco sauce
  • 1 cup corn Optional ingredient.
  • chopped cilantro For garnish.

Method
 

Preparation
  1. Heat a large skillet over medium heat.
  2. Add the ground beef and brown it until fully cooked, then drain any excess fat.
  3. Stir in the taco seasoning, diced tomatoes, and taco sauce. Cook for about 5 minutes.
Cooking
  1. While the beef is cooking, prepare the tortellini according to package instructions. Drain and set aside.
  2. Add the cooked tortellini to the beef mixture and fold everything together.
  3. If using corn, stir it in along with half of the shredded cheese. Cook until heated through and melt the remaining cheese on top.
Serving
  1. Garnish with chopped cilantro before serving hot.
