  • 2 cups diced fresh apples the sweeter, the better
  • 1 teaspoon cinnamon don't skimp on the spice
  • 1/2 cup honey or maple syrup try to go for pure maple if possible
  • 1/4 cup almond butter or peanut butter pick your favorite
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract the real stuff makes a difference

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine the oats, diced apples, cinnamon, and salt. Mix until everything is coated.
  3. In another bowl, whisk together the honey or maple syrup, almond butter, and vanilla extract until you have a silky texture.
  4. Pour the wet mix into your dry ingredients, using a spatula to combine until everything is moistened.
  5. Spread your mixture evenly in the prepared baking dish, pressing it down gently.
  6. Bake for 25-30 minutes until the edges are golden brown.
  7. Allow them to cool completely in the pan before slicing them into bars.
