- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, combine the oats, diced apples, cinnamon, and salt. Mix until everything is coated.
- In another bowl, whisk together the honey or maple syrup, almond butter, and vanilla extract until you have a silky texture.
- Pour the wet mix into your dry ingredients, using a spatula to combine until everything is moistened.
- Spread your mixture evenly in the prepared baking dish, pressing it down gently.
- Bake for 25-30 minutes until the edges are golden brown.
- Allow them to cool completely in the pan before slicing them into bars.
