Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Use room temperature butter for optimal creaming.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract Feel free to swap this out with lemon or coconut extract.
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For Rolling
  • 1 cup granulated sugar For rolling the cookie dough before baking.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Add the eggs, vanilla extract, and almond extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, mixing gently until just combined.
  5. Scoop tablespoon-sized portions of dough and roll them in granulated sugar.
  6. Place the cookies on a baking sheet lined with parchment paper, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
