Casserole Base
  • 2 cups cooked rice leftover rice from last night works beautifully
  • 2 cups cooked chicken, shredded rotisserie chicken is a great shortcut
  • 1 can cream of chicken soup or try a homemade version if you’re feeling ambitious
  • 1 cup chicken broth for added moisture
  • 1 cup cheese cheddar or your favorite variety
  • 1 cup mixed vegetables frozen peas and carrots are perfect
Seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt
  • to taste Pepper
Topping (optional)
  • to taste Crunchy topping like breadcrumbs or crispy onions for extra texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, cheese, and mixed vegetables.
  3. Add garlic powder, onion powder, salt, and pepper. Mix everything until it’s well combined.
  4. Pour the mixture into a greased baking dish, spreading it out evenly.
  5. If you’re using a crunchy topping, sprinkle it generously over the casserole.
Baking
  1. Bake for 25-30 minutes or until you see it bubbling and golden on top.
  2. Let it cool for a few minutes before serving.

Notes
