Casserole Ingredients
  • 2 cups cooked shredded chicken Leftover rotisserie chicken works great!
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup cream of mushroom soup
  • 1 cup mixed vegetables Such as peas and carrots.
  • 1 cup shredded cheese Cheddar or your favorite blend.
  • 1 each onion, diced
  • 2 cloves garlic, minced
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together your shredded chicken, cooked rice, chicken broth, cream of mushroom soup, mixed vegetables, half of the cheese, diced onion, and minced garlic.
  3. Season the mixture generously with salt and pepper to suit your taste.
  4. Transfer everything into a greased 9x13 inch baking dish.
  5. Sprinkle the remaining cheese on top.
  6. Cover the dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the cheese is melted.
  8. Allow it to cool for a few minutes before serving.

Notes
