- In a large bowl, mix together your shredded chicken, cooked rice, chicken broth, cream of mushroom soup, mixed vegetables, half of the cheese, diced onion, and minced garlic.
- Season the mixture generously with salt and pepper to suit your taste.
- Transfer everything into a greased 9x13 inch baking dish.
- Sprinkle the remaining cheese on top.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the cheese is melted.
