  • 4 pieces Chicken Breasts (boneless and skinless) Main protein in the dish.
  • 1 cup Salsa Choose your favorite level of spiciness.
  • 1 can Black Beans Canned black beans for convenience, drained and rinsed.
  • 1 cup Corn Sweet corn can be fresh or canned.
  • 1 piece Avocado (diced) Adds creaminess and healthy fats.
  • 1/4 cup Cilantro Lime Dressing Fresh or store-bought for zesty flavor.
  • to taste Salt and Pepper Simple seasonings to enhance flavor.
  • 2 cups Rice or Quinoa (optional) Great base for the bowl.
  • 1 cup Cheese (shredded, optional) Cheddar or Monterey Jack works well.

Method
 

Preparation
  1. Place chicken breasts in the crockpot and pour salsa over them to cover.
  2. Add black beans and corn to the crockpot after draining and rinsing.
  3. Season mixture with salt and pepper to taste.
Cooking
  1. Cook on low for 6-8 hours or high for 3-4 hours.
  2. Once cooked, shred the chicken with two forks.
Serving
  1. Serve in bowls topped with diced avocado and drizzle with cilantro lime dressing.
  2. Optionally, serve over rice or quinoa and top with cheese.
