  • 2 cups cooked chicken, shredded Use rotisserie chicken for a shortcut.
  • 1 piece bell pepper, sliced Any color works!
  • 1 piece onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups cooked rice Great for using up leftovers.
  • 1 cup shredded cheese Cheddar or Mexican blend is perfect.
  • 1 packet fajita seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, bell pepper, onion, black beans, corn, diced tomatoes, cooked rice, and fajita seasoning. Mix until well combined.
  3. Transfer the mixture to a greased baking dish, spreading it evenly.
  4. Top with shredded cheese, making sure to cover the surface.
  5. Bake for 25-30 minutes or until the casserole is heated through and the cheese is bubbly and golden.
  6. Let it cool for a few minutes before serving.
