  • 3-4 pieces boneless, skinless chicken breasts
  • 8 ounces Lo Mein noodles (fresh or dried) Egg noodles or whole wheat noodles can also be used.
  • 1 piece red bell pepper, sliced
  • 1 piece yellow bell pepper, sliced
  • 2 pieces carrots, thinly sliced
  • 2 pieces green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil Use extra for cooking.
  • 3 cloves fresh minced garlic

Method
 

Preparation
  1. Gather all your ingredients and chop vegetables into bite-sized pieces.
  2. Cook the lo mein noodles according to package instructions. Aim for al dente; drain and set aside.
Cooking
  1. In a large skillet or wok, heat a splash of sesame oil over medium-high heat.
  2. Add the chicken and sauté until golden brown and thoroughly cooked, roughly 6-8 minutes. Once done, remove the chicken and set it aside.
  3. In the same skillet, toss in your sliced bell peppers, carrots, and green onions. Stir-fry until tender yet still slightly crisp, about 3-4 minutes.
  4. Return the chicken to the skillet with the veggies. Add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well-coated and heated through.
  5. Serve hot with extra soy sauce on the side, if desired.

Notes
