Ingredients
  

Casserole Base
  • 1.5 cups long grain white rice
  • 2 cans cream of chicken or mushroom soup
  • 1 cup water
  • 2 cups milk can use low-fat or non-dairy version
  • 1 envelope onion soup mix or homemade
  • 1.5 cups shredded cheddar cheese additional cheese for topping
  • 3 pieces boneless skinless chicken breasts (or thighs)
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F and grease a baking dish.
  2. In a large bowl, mix the rice, soups, milk, water, and onion soup mix until well combined.
  3. Pour this mixture into your prepared baking dish.
  4. Add half of the cheese to the mixture and stir gently to combine.
  5. Nestle the chicken on top of the rice mixture. Season with salt and pepper.
Baking
  1. Cover the dish tightly with foil and bake for 1.5 to 2 hours.
  2. Remove the foil and sprinkle the remaining cheese on top.
  3. Bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  4. Let it sit for 15-20 minutes before serving to allow the casserole to set.

Notes
