Ingredients
  

Casserole Base
  • 1.5 cups long grain white rice
  • 2 cans cream of chicken or mushroom soup Feel free to use lower-fat versions.
  • 1 cup water
  • 2 cups milk Dairy-free alternatives can be used.
  • 1 envelope onion soup mix Homemade options available.
  • 1.5 cups shredded cheddar cheese
  • 3 pieces boneless skinless chicken breasts Chicken thighs can be used as an alternative.
  • Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F. Grease your baking dish to prevent sticking.
  2. In a large bowl, combine the rice, cream of chicken (or mushroom) soups, milk, water, and onion soup mix. Stir until well blended.
  3. Pour this mixture into your greased baking dish.
  4. Sprinkle half of the shredded cheese over the top and stir gently to incorporate.
  5. Nestle the chicken breasts or thighs on top of the mixture.
  6. Cover the dish tightly with foil to trap all the flavors as it bakes.
Baking
  1. Bake for 1.5 to 2 hours, until the chicken is cooked through.
  2. Remove the foil and sprinkle the remaining cheese on top.
  3. Allow it to sit for 15–20 minutes before serving.
