Ingredients
  

For the Chicken
  • 2 pieces chicken breasts Can substitute with chicken thighs for more flavor.
  • 2 pieces limes Lemon juice can be used as a substitute.
  • 1 tablespoon chili powder
  • 1 teaspoon cumin Can substitute with smoked paprika for a different flavor.
  • Salt and pepper To taste
For Assembly
  • 8 pieces corn tortillas Ensure they are gluten-free if necessary.
  • 1 piece red onion, thinly sliced
  • 1 piece avocado, diced
  • Fresh cilantro (optional) For garnish.

Method
 

Preparation
  1. In a bowl, combine the juice of both limes, chili powder, cumin, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
Cooking
  1. Preheat your grill to medium heat.
  2. Grill the chicken for about 6-7 minutes on each side, until cooked through and marked.
  3. In a skillet over low heat, warm the corn tortillas until pliable.
Assembly
  1. Slice the grilled chicken and place it on warm tortillas.
  2. Top with red onion and diced avocado, and add a squeeze of fresh lime.
  3. Garnish with fresh cilantro if desired.
