  • 1 lb Grilled chicken Marinate for deeper flavor if desired.
  • 1 cup Tzatziki sauce Store bought or homemade.
  • 1 medium Cucumber Diced for the tzatziki.
  • 1 medium Tomato Chopped for the tzatziki.
  • 2 cups Rice or quinoa Prepared according to package instructions.
  • 2 tbsp Olive oil For drizzling and flavor.
  • 1 tbsp Lemon juice Freshly squeezed for flavor.
  • to taste pinch Salt Adjust based on preference.
  • to taste pinch Pepper Adjust based on preference.
  • 1/4 cup Fresh herbs Parsley or dill, chopped for garnish.

Method
 

Preparation
  1. Start by seasoning the chicken with salt and pepper. Grill it over medium-high heat for about 6-8 minutes per side until cooked through. Slice the chicken into strips.
  2. In a medium bowl, mix the tzatziki sauce with diced cucumber and chopped tomatoes to create a heartier texture.
  3. Prepare the rice or quinoa according to package instructions, then set aside.
Assembly
  1. In a large serving bowl, layer warm rice or quinoa, sliced grilled chicken, and then spoon over the tzatziki mixture.
  2. Drizzle with olive oil and lemon juice, season with additional salt and pepper, and garnish with fresh herbs.
