  • 2 pieces chicken breasts
  • 1 cup rice white or brown rice, brown rice will require longer cooking time.
  • 2 cups chicken broth
Tzatziki Sauce Ingredients
  • 1 cup Greek yogurt for a creamier sauce, use full-fat yogurt.
  • 1 piece cucumber, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill or 1 teaspoon dried dill.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, garlic, salt, and pepper. Coat the chicken breasts with the mixture.
  3. In a baking dish, combine rice and chicken broth, then place the seasoned chicken on top.
  4. Cover with foil and bake for 25-30 minutes or until the chicken is cooked and the rice is tender.
Tzatziki Sauce Preparation
  1. While the chicken and rice are baking, prepare the tzatziki sauce by mixing yogurt, grated cucumber, lemon juice, dill, garlic, salt, and pepper in a bowl.
Serving
  1. Once the chicken is done, serve it over the rice and drizzle with the tzatziki sauce.

Notes
