- Grab a large skillet and heat the olive oil over medium-high heat.
- Add in the sliced chicken and season it generously with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.
- Toss in the minced garlic and the sliced bell pepper, sautéing them together for another 2-3 minutes.
- Add the zucchini and cook for an additional 3-4 minutes until tender but still a little crisp.
- Drizzle soy sauce over everything, tossing gently to combine all flavors.
- Serve warm, garnished with sesame seeds if desired.
Notes
For added flavor, marinate the chicken in soy sauce and garlic prior to cooking. Store leftovers in an airtight container for 3-4 days or freeze for up to three months.
