  • 2 medium zucchini, sliced
  • 2 tablespoons olive oil For sautéing.
  • 3 cloves garlic, minced
  • 1 piece bell pepper, sliced Can be substituted with other colorful veggies.
  • to taste soy sauce Can substitute with tamari or coconut aminos if avoiding soy.
  • to taste salt and pepper Season to preference.
  • optional sesame seeds for garnish For added crunch.

Preparation
  1. Grab a large skillet and heat the olive oil over medium-high heat.
  2. Add in the sliced chicken and season it generously with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  3. Toss in the minced garlic and the sliced bell pepper, sautéing them together for another 2-3 minutes.
  4. Add the zucchini and cook for an additional 3-4 minutes until tender but still a little crisp.
  5. Drizzle soy sauce over everything, tossing gently to combine all flavors.
  6. Serve warm, garnished with sesame seeds if desired.
