  • 1 lb chicken breast, sliced into thin strips You can swap for shrimp or tofu.
  • 2 medium zucchinis, sliced into half-moons
  • 2 tablespoons vegetable oil For frying.
  • 3 cloves garlic, minced
  • 1 large bell pepper, sliced Any color.
  • 2 tablespoons soy sauce Use tamari for gluten-free.
  • 1 teaspoon ginger, minced Fresh is best!
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving

Method
 

Preparation
  1. Heat the vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add the sliced chicken and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes.
  3. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  4. Stir in the sliced zucchinis and bell pepper. Stir-fry for another 3-4 minutes until tender but still crunchy.
  5. Pour in the soy sauce, mixing until everything is heated through.
  6. Serve hot over cooked rice or noodles.

Notes
