  • 1 lb chicken breast, sliced Use boneless, skinless chicken breast for best results.
  • 2 medium zucchinis, sliced
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon olive oil For cooking.
  • 2 cloves garlic, minced Adds flavor.
  • 1 teaspoon ginger, minced Adds a fresh kick.
  • to taste Salt and pepper Season according to preference.
  • optional chopped green onions for garnish Enhances presentation and flavor.

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and ginger, and sauté for 1 minute until fragrant.
  4. Add sliced zucchini and soy sauce, cooking for another 3-5 minutes until zucchini is tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions if desired.

Notes

Make sure not to overcook the zucchini. It should be tender but still have a bit of crunch. Feel free to add other vegetables like bell peppers, carrots, or broccoli for extra nutrition and color. If you like it spicy, add a pinch of red pepper flakes or sliced chili peppers.
