- Preheat your oven to 350°F (175°C).
 - In a mixing bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
 - In another bowl, cream the softened butter with granulated and brown sugar until fluffy.
 - Mix in the egg and vanilla extract until smooth.
 - Gradually stir in the dry ingredients until just combined.
 - In a small bowl, combine brown sugar and cinnamon for the filling.
 - On a piece of parchment paper, spread half of the cookie dough evenly. Sprinkle with the filling mixture, then roll it up tightly.
 - Slice the rolled dough into rounds and place them on a lined baking sheet.
 - Bake for 10-12 minutes or until the cookies are golden brown.
