Ingredients
  

For the cookies
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
For the filling
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, cream the softened butter with granulated and brown sugar until fluffy.
  4. Mix in the egg and vanilla extract until smooth.
  5. Gradually stir in the dry ingredients until just combined.
  6. In a small bowl, combine brown sugar and cinnamon for the filling.
  7. On a piece of parchment paper, spread half of the cookie dough evenly. Sprinkle with the filling mixture, then roll it up tightly.
  8. Slice the rolled dough into rounds and place them on a lined baking sheet.
  9. Bake for 10-12 minutes or until the cookies are golden brown.
