  • 1 loaf Bread A rustic baguette or soft brioche.
  • 1 cup Cheese Melting cheese like cheddar or mozzarella.
Veggies
  • 1 cup Bell peppers Diced; can swap for favorites.
  • 1 cup Onions Diced; adds flavor.
Spices and Oils
  • 1 tbsp Olive oil For sautéing the veggies.
  • to taste Salt and Pepper With optional herbs like basil or chives.

Method
 

Preparation and Cooking
  1. Preheat your oven to 375°F (190°C).
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add diced bell peppers and onions, cooking until caramelized, about 5 minutes.
  3. In a bowl, whisk the eggs, seasoning with salt and pepper.
  4. Spread the cooked veggies evenly in the skillet and pour the eggs over the top.
  5. Sprinkle cheese on top and transfer the skillet to the oven.
  6. Bake for 15-20 minutes, until the eggs are set and cheese is bubbling.
  7. Let cool slightly before slicing.
