  • 2 cups shredded cooked chicken using rotisserie chicken or leftover turkey
  • 1 can cream of chicken soup can use low-sodium or homemade alternatives
  • 1 can French onion soup
  • 1 cup sour cream substitute with dairy-free yogurt for a lighter option
  • 1 cup shredded cheese use mozzarella for milder taste or Swiss for nuttiness
  • 1 cup French fried onions reserve some for topping
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup chopped parsley for garnishing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well-coated.
  3. Stir in half of the French fried onions.
  4. Transfer the mixture into a greased baking dish and spread it out evenly.
  5. Sprinkle the remaining French fried onions generously over the top.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until bubbling and golden brown.
  2. Garnish with chopped parsley before serving.
