Dressing
  • 2 tablespoons lemon juice Use fresh lemons for best flavor.
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin Adjust according to taste.

Method
 

Preparation
  1. In a large mixing bowl, combine cottage cheese, chickpeas, cherry tomatoes, cucumber, red onion, and parsley. Gently stir until everything is well mixed.
  2. In a separate small bowl, whisk together lemon juice, olive oil, salt, pepper, and cumin to create a quick and zesty dressing.
  3. Pour the dressing over the salad mixture and toss gently to combine without mashing the beans or cottage cheese.
  4. Taste and adjust the seasoning with extra salt and pepper if necessary.
  5. If desired, line a serving platter or individual plates with lettuce leaves.
  6. Spoon the salad mixture onto the lettuce leaves or serve directly in bowls.
  7. Garnish with more parsley if desired.
  8. Enjoy immediately or let chill in the fridge for about 30 minutes to meld the flavors.
