- In a mixing bowl, combine the cottage cheese, almond flour, eggs, baking powder, garlic powder, and a sprinkle of salt. Use a fork or spoon to mix until you have a uniform dough.
- Heat a non-stick skillet over medium heat, adding a drizzle of olive oil to coat the bottom.
- Spoon a generous portion of the dough onto the skillet. With a spatula, flatten it into a round shape, about half an inch thick.
- Cook for 2-3 minutes on each side, or until you see a lovely golden-brown color.
- Remove and repeat with the remaining dough, adding more oil as needed.
- Serve your flatbreads warm, adorned with your favorite toppings or simply as they are!

Notes
These flatbreads can be topped with avocado slices, Greek yogurt, or roasted vegetables. They also serve well as wraps filled with fresh greens or grilled chicken. Store leftovers in an airtight container in the fridge for up to three days, or freeze for longer storage. Reheat gently in a skillet with olive oil.
