  • 1 cup cottage cheese
  • 1 cup almond flour Can be substituted with whole wheat flour.
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder Can be substituted with onion powder or spices like smoked paprika.
  • Salt to taste
  • Olive oil (for cooking)

Method
 

Preparation
  1. In a mixing bowl, combine the cottage cheese, almond flour, eggs, baking powder, garlic powder, and a sprinkle of salt. Use a fork or spoon to mix until you have a uniform dough.
  2. Heat a non-stick skillet over medium heat, adding a drizzle of olive oil to coat the bottom.
  3. Spoon a generous portion of the dough onto the skillet. With a spatula, flatten it into a round shape, about half an inch thick.
  4. Cook for 2-3 minutes on each side, or until you see a lovely golden-brown color.
  5. Remove and repeat with the remaining dough, adding more oil as needed.
  6. Serve your flatbreads warm, adorned with your favorite toppings or simply as they are!
