Method
 

Preparation
  1. In a mixing bowl, combine the cottage cheese and the egg. Make sure it’s well blended; this will be your base.
  2. Add in the almond flour along with the baking powder, salt, and pepper. Mix until a dough forms. It will be slightly sticky.
Cooking
  1. Heat a couple of tablespoons of olive oil in a skillet over medium heat.
  2. Pour the batter into the hot skillet, using a spatula to spread it out evenly into a circle.
  3. Let it cook for 2-3 minutes on each side until it’s golden brown and slightly firm to the touch.
  4. Once done, remove from the skillet and allow it to cool slightly.
