  • 1 cup cottage cheese Provides moisture and protein.
  • 1 large egg Helps bind the ingredients together.
  • 1/2 cup almond flour Low-carb alternative, can substitute with all-purpose flour.
  • 1/2 teaspoon baking powder Gives the flatbread a little lift.
  • Salt and pepper, to taste For seasoning.
  • Olive oil for cooking Adds flavor and prevents sticking.

Method
 

Preparation
  1. In a mixing bowl, combine the cottage cheese and the egg. Make sure it’s well blended; this will be your base.
  2. Add in the almond flour along with the baking powder, salt, and pepper. Mix until a dough forms. It will be slightly sticky.
Cooking
  1. Heat a couple of tablespoons of olive oil in a skillet over medium heat.
  2. Pour the batter into the hot skillet, using a spatula to spread it out evenly into a circle.
  3. Let it cook for 2-3 minutes on each side until it’s golden brown and slightly firm to the touch.
  4. Once done, remove from the skillet and allow it to cool slightly.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, and reheat in the skillet or microwave. For extra flavors, consider adding herbs or spices directly into the dough.
