Ingredients
  

For the Chicken
  • 2 large chicken breasts (boneless, skinless) Season with salt and pepper
For the Pasta
  • 8 oz linguine pasta Cook according to package instructions
For the Sauce
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped Can substitute dried parsley
  • 1 tbsp fresh thyme leaves Can substitute dried thyme
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 cup chicken broth Can substitute vegetable broth
  • 1 tbsp lemon juice
  • Freshly grated Parmesan cheese, for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the chicken for about 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken and let it rest before slicing into bite-sized pieces.
Cooking the Pasta
  1. In a pot of salted boiling water, cook the linguine according to package instructions until al dente.
  2. Reserve about half a cup of pasta water before draining.
Making the Sauce
  1. In the same skillet, melt the unsalted butter over medium heat.
  2. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Stir in chicken broth, smoked paprika, onion powder, and optional red pepper flakes. Let it simmer for a few minutes.
Combining Everything
  1. Toss the drained linguine into the skillet with the sauce.
  2. Add lemon juice, fresh parsley, and thyme, stirring to combine.
  3. If the sauce is too thick, drizzle in some reserved pasta water until it's just right.
Serving
  1. Divide the pasta and chicken onto plates.
  2. Sprinkle generously with freshly grated Parmesan cheese and add extra herbs if desired.

Notes
