Ingredients

Seafood and Cheeses
  • 0.5 lb cooked shrimp, finely chopped
  • 0.5 lb cooked crab meat, shredded
  • 1 cup shredded Monterey Jack cheese
  • 0.5 cup cream cheese, softened
  • 0.5 cup queso dip mild or spicy, depending on your preference
  • 1 tbsp fresh cilantro, chopped
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika
Tortillas and Frying
  • 8 small flour tortillas can swap for corn tortillas for a gluten-free option
  • 2 tbsp butter or oil for frying

Method

Preparation
  1. In a medium bowl, combine the chopped shrimp, shredded crab meat, Monterey Jack cheese, cream cheese, and queso dip. Add the cilantro, garlic powder, and smoked paprika. Mix until all the ingredients are well incorporated.
  2. Take a tortilla and place a generous scoop of the filling in the center. Carefully roll up from the edge closest to you, tucking in the sides as you go. Repeat with the remaining tortillas.
Cooking
  1. In a skillet, heat the butter or oil over medium heat. Once hot, carefully place a few rolls in the skillet, seam-side down.
  2. Fry until golden brown and crispy, about 3-4 minutes on each side.
  3. Remove from heat and drain on paper towels before serving.

Notes

For best results, do not overcrowd the pan while frying. Let the rolls sit for a minute post-frying to help the cheese set. Can experiment with spices and fillings to suit your taste.
