  • 2 cups whole kernel corn, drained can use fresh, frozen & thawed, or canned
  • 1 cup cream-style corn
  • 4 oz cream cheese, softened and cubed
  • ¼ cup unsalted butter, melted
  • ½ cup whole milk
  • 1 large egg
  • ½ cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese (optional, for topping)

Preparation
  1. Preheat your oven to 180°C (350°F). Lightly grease a medium baking dish.
  2. In a large bowl, whisk together the melted butter, milk, egg, and cream cheese until it’s mostly smooth.
  3. Gently stir in both the whole kernel corn and cream-style corn until combined.
  4. Add in the flour, sugar, baking powder, salt, and pepper. Be careful not to overmix; just combine everything until you see no dry flour.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. If you're feeling cheesy, sprinkle the shredded cheddar cheese on top.
  7. Bake in the preheated oven for 40–45 minutes, or until the center is set, and the top feels lightly golden and inviting.
  8. Allow it to rest for about 5–10 minutes before diving in; this helps it firm up beautifully.
