  • 2 cups roasted vegetables (e.g., bell peppers, zucchini, cherry tomatoes) Feel free to substitute based on preference.

Preparation
  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a blender, combine avocados, almond milk, pesto, lemon juice, salt, and pepper. Blend until smooth.
  3. In a large bowl, toss the cooked pasta with the avocado sauce until well coated.
  4. Add roasted vegetables and mix gently.

Notes
