  • 2 cups cooked chicken, diced (rotisserie chicken works beautifully)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup mixed vegetables (peas, carrots, and corn) Feel free to use leftover vegetables.
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • Fresh herbs (like parsley or thyme) For garnish.

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cooked rice, diced chicken, cream of chicken soup, and chicken broth until well combined.
  3. Toss in the mixed vegetables along with the garlic powder, onion powder, salt, and pepper; stir to incorporate all those flavors.
  4. Pour the colorful mixture into a greased baking dish, spreading it out evenly.
  5. Generously top with shredded cheese.
  6. Cover the dish with aluminum foil, then bake for 25-30 minutes.
  7. After 30 minutes, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Garnish with fresh herbs before serving.
